Chicken Tortilla Soup

SO I was a part of a food blog for a while and because I know the people involved still eat it mustbe the whoe blog thing.

I recently made chicken tortilla soup for mexican night.

Here is the recipe:

1 1/2 - 2 lbs. of bone-in chicken thighs (I use thighs because they tend not to dry out like breasts and they are way more afforadble.)
6 cups of chicken broth
1 can of diced tomatoes
1/2 can of diced tomatoes w/ green chiles
i large white onion chopped
3 cloves of garlic minced
1 jalapeno (I didn't use jalapeno the last time because the store didn't have it I used poblano-not spicy enough for me)
2-3 tsps chili powder
2 tsps cumin
salt to taste
a palmful of chopped cilantro
1 lime (juice half for cooking and half during serving)

soft corn tortillas - fry to garnishing bowls
chihuahua cheese or monteray jack - to sprinkle on top of bowls (i would of loved some queso blanco but it was so expensive)

bake chicken thighs @ 350 degress for about 40 mins - remove skin and debone - shred chicken

in a skillet cook onions and garlic (in a little vegetable oil)

I used the crockpot cooked on low for about 8 hours

combine the rest of the ingredients in crockpot

Why did I ever believe I could do this?

Yes I mean blogging on a regular basis. This could mean a few things. I have more of a social life that before. or. I go out too much. I have nothing to write about. Its not important. Nobody reads this thing anyway. All sorts of thing.

I have a weird dream last night. It involved old friends, family, a MCTS bus and a Applebee's style restaurant. There were a lot of people I didn't know also. I have no clue what that was about but my subconscious created it so I guess.

Well maybe I will make a better attempt at blogging.

I turned on my ipod this morning which I desperately need new earbuds for and then browsed to a song, I've got to have you by Carly Simon. This made me think that a person music collection must say something about them. I am sure mine would say she is just a few steps away from being absolutely nuts. I like whole albums not just one sone from here and there. Of course I don't have some single songs. For instance the Carly Simon song.

Well who knows.

Today's word: boundaries

I know I am slightly weird about my whole strangers being touchy but if you have been in the situations that I have been in, you would more like see my point. Today I had a close encounter, a stranger appeared from what seemed like nowhere and stood like 2 inches away from me while I was trying to pay for coffee.

I pay and had to side step my way out of the situation. I really do wonder why people stand so close. This does not improve my mood which is already on shaky ground. Anyway I went over to the coffee stand and hear that he is buying coffee. This is an 'oh shit' moment for me because now I have to speed through coffee pouring so we don't have a repeat occurrence. I did not make it. There he was again all over me.

I quickly gathered cream and sugar and high tailed it out of there.

What should I even make of today??

Someone turned my key

Well I am about to blur the line between reality and sci-fi/fiction. Maybe because I have started to watch the final episodes of the fading in popularity tv show Heroes again.

I will one day be horrifically murdered. That is if people start to gain the ability to read minds. Today I was at the bus stop with someone I deemed "weirdo factory". What does that mean? I later came to the realization that that doesn't make any sense but at the time it was an accurate description.

This guy must of entered the Starbucks shortly after I exited because he was clutching his Starbucks iced coffee and bakery goods, his ipod and a bag that I can only assume held his other technologies. Normally this behavior would have not set of alarms, not the "man this guy is weird" alarms. Except he was frigidity, the type that makes others around you nervous. Plus I learned this morning about a serial killer in Milwaukee. Which led me to believe that if this guy could read minds he would murder me on this bus and who would help me. The bus driver would have to stop the bus not leaving him with much time to help. Certainly not the woman talking to herself on the bus, obviously her mind is preoccupied.

It may be time for me to turn off the tv, at least for a little while. I believe this wild fantasy is indication that my brain has not been able to creatively express itself in a while. I just hope that telepathy remains where it is, in my tv.

Dreams

I have had some weird ones this past week. This all started Friday night and I have had one everyday since although. I can only remember two.

Friday night's dream involved my apartment building being on fire.

Saturday night - I remember it being weird but can't remember the dream.

Sunday night's dream revolved around relaxing my hair and having scalp lesions. I know gross huh.

This morning I woke up and it was weird enough for me to write a text to twitter but now I can't remember. Maybe it will come back to me.

The thing is these will all come back to me when I am telling someone a story and I am trying to use this memory(the dream). Then realize that never happened I dreamt that.

The Biggest Loser UPDATE

I must say that I have a huge obsession with the show and I always loved watching Jillian going all crazy on the contestants and standing on them. Fine that's one style of training.

But what happened to Bob today. Joelle. He lost his shit. You know I am not at the ranch trying to lose a bunch of weight but running and keeping pace for 30 seconds can't be that rough. Both trainers throw out the occasion "fuck" but my oh my Bob entertained tonight. Still if I ever had the chance to train with one of them I would train with Bob. I have the tendency to yell and swear back. Does Bob have a fan club?? I seriously watched that clip 4 or 5 times and have it queued up to that spot in case I need to watch it again.

Jillian was so giddy watching that. Go Bob! Tomorrow I will look for a clip to add to the post.

Update: NBC finally put up the full clip of Bob's Meltdown and I have to share i.

She can't help but be an ass

Ann Coulter is at it again. This time in a fight with the ladies of the view. I don't even like agreeing with them because they can be harsh.

You know we are all guilty of our stereotypical views and we shouldn't be blamed for having them initially. Truly it is the way that we make sense of the world. We would never learn anything if we didn't prejudge something then ask about it. Maybe you don't agree.

I think that everyone loves there parents both of their parents until you learn about how parents work. Maybe you don't love them because you found out that if its possible your dad should be in your life or that mothers without problems or illness don't abandon their kids. Then again that's me judging fictional people I made. I grew up knowing both my parents, pathologically loving them as a child. Despite their flaws. So with that I can't judge those who have problems with theirs.

Although that may not seems to prove my point, if you even thought I had one, Ann Coulter can not generalize that bi-racial celebrities use (or identify with) one race over another to get what they want. She definitely uses her white status to get what she wants. Until she is in the shoes of someone bi-racial supposedly who have had to use one race to their advantage she should shut it. I thought she had her jaw wired shut or at least I hoed she did.
